These rich and moist cupcakes with the most delicious cream cheese frosting will blow your and your significant other's minds! And tummies! Red Velvet Cupcakes are a classic Valentine's Day dessert and even without sprinkles they look festive!

Red Velvet Cupcakes with Cream Cheese Frosting

makes 12 cupcakes

Ingredients for the base:

  • 3/4 cup sugar
  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1 tsp cocoa powder
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup buttermilk
  • 3/4 cup vegetable oil
  • red food colouring (I used 1/4 tsp gel food colouring)
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 tsp white vinegar or lemon juice

Ingredients for the frosting:

  • 200g cream cheese
  • 1/2 cup icing sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Making the cake:

  1. Preheat the oven to 1800C and line a muffin tin with cupcake liners. In a small bowl, combine sugar, flour, baking powder, cocoa powder and salt. Set aside.
  2. In a large bowl combine egg, buttermilk, vegetable oil, red food colouring and vanilla extract. Beat with an electric mixer for about 1 minute.
  3. Add dry ingredients to wet and beat with an electric mixer for 1 minute. In a small bowl, mix together baking soda with lemon juice or white vinegar. It will fizzle! Then add it to the batter and quickly stir.
  4. Divide the batter into 12 cupcake liners filling them 2/3 full. Bake for about 20-25 minutes or until a toothpick inserted in the middle comes out clean.

Making the frosting:

  1. In a bowl, beat together cream cheese with icing sugar for about 1-2 minutes. Add vanilla extract. Continue beating the cream and start adding the heavy cream. After 3-4 minutes the frosting should be stiff enough to pipe it on your cupcakes! Pipe it out using a round tip and sprinkle the cupcakes with sugarhearts.
