One of the things I've always wanted to do was my own peanut butter. I couldn't imagine peanuts being crushed to a consistency of a thick paste... and you must admit: hard and difficult to chop peanuts blended into a butter?! That just sounds unreal! But it turns out... it is 100% real and, in fact, oddly satisfying!


Homemade Peanut Butter

makes about 1/2 - 3/4 cup

Ingredients:

Preparation:

  1. Preheat the oven to 1800C and line a baking tray with baking paper. Throw peanuts on the tray and roast them for about 10-12 minutes until they look a bit more intense in colour. Remove the tray from the oven, transfer the peanuts to a blender container and let them cool.
  2. Once completely cool, start blending the peanuts. It took me 6x30s on the highest speed. Don't worry if the mixture starts crumbling and resembeling a very thick paste you could play with like with play-doh ;-) It will eventually turn more liquid.
  3. Once the peanuts have a smooth paste consistency, add oil, honey and salt. Blend everything together. Add more salt if needed.
  4. Transfer the peanut butter to a jar and eat within 2 months.

* Why is it so important not to use salted peanuts? I'll tell you a little story. When I got a new blender for Christmas I was really, really, REALLY looking forward to making my own peanut butter. So I went to grocery store, the first one I found that was open, and bought a bag of peanuts. Unfortunately, they only had salted but I thought: "Hey! I know that every recipe I read included UNSALTED peanuts but, hey, it cannot be that bad, right? I mean, I would be adding some salt anyway, right?". Well, and I was right - it wasn't that bad. But comparing to a store bought peanut butter it was REALLY salty. It should work out just fine in frostings or cakes, but a PB&J just doesn't taste the same with a very, very, VERY salty peanut butter. So if you're in a hurry and you need peanut butter for a larger sweet-type project - you can use salted peanuts. If you just want to taste those delicious peanuts by eating the peanut butter out of a jar - buy unsalted, good quality peanuts. It's still going to be cheaper than buying Skippy at the grocery store.
