Fall is almost over and we can see and feel it by the snow that has been sprinkling in some parts of the country. There is nothing else to do but to stay home, put our warmest socks on and enjoy a cup of hot chocolate... this time in a slightly different version ;-)


For those who like creative ideas and those who enjoy decorating - chocolate cupcakes that taste just like hot chocolate! Cocoa cupcakes filled with chocolate ganache (it was Bakesaurus' idea!) that tastes perfectly with mascarpone frosting. Naturally with a bit of marshmallows and a straw... not edible, though! ;-) They can serve as a gift for someone or as a nice dessert after Sunday dinner. I made mine for my better half. On our first date he told me he loves hot chocolate. He liked that one too!


Hot Chocolate Cupcakes

10-12 cupcakes

Ingredients for cake:

  • 1 cup flour
  • 1 cup sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1/2 tsp instant espresso powder
  • 1/2 cup (115ml) milk
  • 1/4 cup (55ml) vegetable oil
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 cup boiling water

Ingredients for frosting:

  • 200g heavy cream
  • 250g mascarpone
  • 3 tbsp sugar
  • a pinch of salt

Ingredients for chocolate ganache:

  • 100g dark chocolate
  • 1 tbsp caster sugar
  • 15g unsalted butter
  • 60ml heavy cream

Extra:

  • 10-12 straws (I got mine from Ikea and cut into smaller ones since they were quite big)
  • cocoa powder for dusting
  • mini marshmallows

Preparation:

  1. Bake cupcakes: In a large bowl combine flour, sugar, baking powder and soda, salt, cocoa powder and coffee. In a separate bowl combine milk, oil, egg and vanilla extract. Add wet ingredients to the dry and delicately stir. Add boiling water and mix with a hand mixer for 1-2 minutes, on high speed, in order to add air (cupcakes will be fluffier). Line a muffin tray with cupcake liners and fill them 3/4 full with the batter. Depending on the size, bake at 1800C, smaller - 12-15 minutes, large - 20-25 minutes, or until a toothpick inserted in the centre comes out clean.
  2. Prepare chocolate ganache: In a small bowl place chopped chocolate, caster sugar and butter. Boil the cream and pour onto the chocolate. Stir until the chocolate melts and the ganache is smooth.
  3. Prepare frosting: In a large bowl place heavy cream, mascarpone, sugar and salt. Whip together until stiff enough to use as a frosting (about 5-6 minutes). Be careful not to overbeat!
  4. Decorate: Cut a piece from the middle of each cupcake and fill with chocolate ganache. Decorate with frosting and sprinkle with cocoa powder. Add mini marshmallows on top and finish with sticking a straw in the cream.
